Can you believe Christmas is in one week?? And then... the holiday season will officially be over. Which also means that eggnog season will be over. And I am so not ready for that.

But I guess that just means that I need to fit as much of it in as I possibly can over the next seven days. Without making myself so sick that I hate it forever. Because really, I feel like eggnog and candy corn are very similar in that once you take it too far, it's over forever.

So don't worry, I'm just over here enjoying my eggnog for breakfast. Overnight oats style.

Seriously though, I feel like Eggnog Overnight Oats are the perfect way to start your day off really well without going overboard. Right?? Please help me justify having eggnog for breakfast.

I guess these Christmas overnight oats are one of the reasons why eggnog season doesn't last long. Sigh.

Anyway, I promise that this really is a toned down way of getting your eggnog fix. I only used ¼ cup of eggnog, along with ¼ cup of almond milk. Of course, if you want to go all out, feel free to use ½ cup eggnog and go on your holly jolly way.

Actually, the first time I made these eggnog overnight oats, I only had vanilla flavored Greek yogurt and I used all eggnog and let's just say it was a little tooo much sweetness for first thing in the morning.

So, I did some adjusting and came up with this perfect balance.

You don't have to add any toppings, but a little bit of crushed pecans and candy canes never hurt anyone, right? It is the holiday season, after all.

I love breakfasts like this because you prep them at night (when you're already begrudgingly prepping your lunch and making the coffee anyway) and then just grab them in the morning. The less you have to think in the morning, the better, right?

And if you're off to work at the office, you can throw your jar of eggnog overnight oats in your bag and eat it when you arrive. Or on your commute if you can't wait. Which you probably can't.

Just a warning that if you take public transportation, everyone will be pretty jealous to see you digging into a jar of Christmas overnight oats!

Despite the fact that these overnight oats involve eggnog, they're actually pretty healthy. Old fashioned oats are known to prevent cardiovascular disease and control blood sugar levels.

The chia seeds pack a nutrient punch; they're high in antioxidants, protein, and fiber and low in calories.

And the Greek yogurt is full of calcium, protein, and probiotics.

The eggnog? Well, that just helps the overnight oats stay super creamy and filled with holiday flavor.

I'm just happy I now have a legitimate excuse to have eggnog in the morning. You know, in addition to putting it in my coffee (really, I only ever drink my coffee black, unless there's eggnog involved).

Hey, it's only a few weeks a year and there's no better way to get into the holiday spirit.

Ingredients

  • ½ cup old-fashioned oats
  • 1 ½ tsp chia seeds
  • ½ cup 2% Greek yogurt
  • ¼ cup eggnog
  • ¼ cup almond milk (or milk of your choice)
  • tsp nutmeg
  • tsp cinnamon

Instructions

  • Combine old-fashioned oats, chia seeds, Greek yogurt, eggnog, almond milk, nutmeg, and cinnamon in a mason jar; cover; and shake to combine. If your jar isn't big enough, mix together in a bowl before putting in mason jar.

  • Refrigerate overnight, or for at least 8 hours.

  • Before eating, top with crushed pecans and peppermint candy, if you desire.
