Frittatas are typically made of eggs and a variety of mix-ins including vegetables, cheese, and/or meat. The filling variations are endless, so this is a great dish to keep your meal plan interesting!

How to Make a Mexican Frittata

Ingredients

  • Ground Beef – I use organic grass-fed ground beef for this Mexican frittata recipe.
  • Taco Seasoning – Store-bought taco seasoning is an option, but I recommend making your own taco seasoning and keeping it on hand for other Mexican-inspired recipes.
  • Salsa – Classic medium red salsa is delicious in this recipe, but any salsa is fine to use.
  • Green Pepper – Chop a medium green pepper, or substitute a bell pepper in a different color.
  • Plum Tomatoes – Use fresh plum tomatoes from the garden or produce section of your market.
  • Scallions – Green onions give this Mexican frittata recipe a nice flavor. You can substitute regular onion if you’d prefer.
  • Eggs – Use organic large eggs if possible.
  • Cheddar Cheese (optional) – Sharp cheddar cheese is a great choice, but this frittata is very flavorful even without the cheese if you want to keep it dairy-free.

Step Three: Add the Remaining Ingredients and Bake

Add the meat back to the skillet, along with the tomato and scallions. Pour the scrambled uncooked egg on top, and sprinkle with the salt and cheese. Bake the egg mixture for 20 to 25 minutes, or until the frittata is set and no longer jiggly.

It’s easiest to cut this frittata if you let it sit for about 10 minutes before cutting. If you try to cut it right when you take it out of the oven, it will be hard to get clean slices.

Mexican Frittata Recipe Substitution Suggestions

You can skip the cheese if you’re avoiding dairy. Substitute chorizo for the ground beef, and use any other vegetables or cheese to mix up the flavor.

How to Store this Ground Beef Frittata

Leftovers can be stored in the refrigerator for several days in an airtight container. Reheat the leftovers in the oven before serving. You can also freeze the extra frittata if you won’t eat it within four or five days.

FAQ and Recipe Tips for this Mexican Frittata Recipe

Is aFrittata Better Hot or Cold?

I like to serve this Mexican frittata warm out of the oven. It can also be served at room temperature, which might be your best bet if you’re serving this dish at a brunch buffet.

What’s the Best Pan to Make a Frittata in?

I use a cast iron skillet to make this ground beef Mexican frittata. Be sure to grease the skillet very well if it isn’t completely seasoned. Eggs tend to stick more than other ingredients, so it will be difficult to remove the frittata from the skillet if it isn’t well-greased.

How Can You Tell When a Mexican Frittata Is Done?

This Mexican frittata is done when it’s set and no longer jiggly in the middle. The frittata should be brown on top along the edges.

How Do I Stop My Frittata from Burning on the Bottom?

Some people like to cook their frittatas on the stovetop. This can result in the frittata burning on the bottom, which is one reason I prefer to bake it in the oven.

What Do You Serve with Frittata?

Some of my favorite side dishes to go with a frittata are green salad, roasted potatoes, rice, or crusty bread. Top the frittata itself with sliced avocado, fresh cilantro, pico de gallo, sour cream, or any of your favorite taco toppings.
